Here in the northeastern U.S., we get to enjoy local strawberries for just a few short weeks. Once I get my fill of eating the fresh berries in all their juicy glory, then it’s the time to head into the kitchen.

Strawberry Shortcake Recipe
A true strawberry shortcake is not a layer cake, it’s more of a biscuit topped with fresh berries and lots of whipped cream. It’s the perfect early summer dessert.

To keep your berries up to a week: Hull the berries, then store them in the refrigerator in a covered container which has been lined with paper towels. Do not wash the berries until you’re ready to use them.
To keep your berries up to 2 weeks: Leave the leaves on the berries. Mix 1/4 cup of vinegar with 1 1/2 cups of cool water. Soak the berries in the vinegar solution for 5 minutes. Rinse the berries in fresh water and place them on a paper towel to dry. Store them in the refrigerator in a paper-towel-lined covered container for up to 2 weeks.
How to Freeze Strawberries
You can freeze strawberries to use in drinks, smoothies or in recipes that use strawberry puree rather than whole berries. Hull the strawberries and pack them into a freezer bag. Lay the bag flat so the berries are in a single layer until they are completely frozen. Store in the freezer for up to 3 months.
