How to Store Rhubarb

  • Purchase rhubarb that is fresh, firm and undamaged.
  • Remove any leaves from the stalks as they leaves are not edible.
  • Rhubarb should be wrapped in plastic or stored in a produce bag. Do not wash the rhubarb before refrigerating. Rhubarb can be refrigerated for up to 3 weeks.
  • Rinse the stalks in cool water before preparing for your recipe.
  • For longer term storage rhubarb can be frozen as described below.

How To Freeze Rhubarb

Wash the rhubarb stalks and trim off the dried ends. Chop the rhubarb into 1/2″ chunks. Spread the rhubarb pieces in a single layer on a parchment lined baking sheet. Freeze the rhubarb on the pan until completely frozen. Transfer the frozen rhubarb chunks to a freezer bag.
